    4 chicken breasts
    1/2 c. water
    1/4 c. apricot brandy
    2 T. currants
    1 pkg. (6 oz) dried apricots
    2 T. vegetable oil
    1-1/2 t. dried thyme leaves
    1/2 t. salt
    1/4 t. pepper
    1 lemon, thinly sliced

    Recipe



    Remove skin and fat from chicken (I use boneless, skinless breasts).

    Mix water, brandy, currants and apricots. Let stand 15 min. Heat oil in nonstick skillet until hot. Cook chicken in oil over medium heat about 15 minutes or until light brown on all sides; drain. Sprinkle thyme, salt and pepper over chicken. Add apricot mixture and lemon. Heat to boiling; reduce heat. Cover and simmer 35 to 40 min, spooning pan juices over chicky occasionally, until juices run clear. YUMMY!!!!

    285 cal/serving....10 g. fat.
