DAVE'S CLAM CHOWDER

List of Ingredients
1/2 c clarified butter
1 clove garlic - minced
1 med. onion - choppped
1 rib celery - chopped
1/2 tsp ground white pepper
1 bay leaf
1/4 tsp thyme
1/2 c flour
3 (10 oz) bottles clam juice
3 c 1/2 & 1/2 cream
1 lg. potato - diced into 1/4" pieces
1 tsp salt
2 (6.5 0z) cans chopped clams with juice
Recipe
In large, heavy bottomed pot over low heat saute garlic in clarified butter for 1-2 min. Add onions, celery, and spices. saute till onions are translucent. Stir in flour and cook over LOW heat for 5 min. being CAREFUL not to brown. Slowly add clam juice and 1 1/2 c cream, stirrring constantly to avoid lumps. Bring to boil, reduce heat and simmer 10 min. Add diced potatoes and salt. simmer 20-30 min or till potatoes are just tender. Stir in the rest of the cream. remove from heat and add chopped clams. Stir well and let stand one min. Serve Hot.
