    List of Ingredients




    1/2 stick butter
    2 cups chopped mixed mushrooms
    1/2 cup minced scallions
    2 garlic cloves, minced
    salt and cayenne pepper to taste
    1 tsp dry mustard
    2 tsp. wild mushroom powder(grind dried wild
    mushrooms in food processor)
    3 cups chicken broth
    2 Tbl.dry sherry
    2 egg yolks mixed with 1/4 cup heavy cream

    Recipe



    Melt the butter in a large skillet over
    medium low heat. Saute the mushrooms,
    scallion and garlic in the butter for about
    30 minutes, until mixture is thick. Add the
    salt and cayenne, dry mustard, and mushroom
    powder, mix well and cook for about 5
    minutes. Pour in the chicken broth and
    sherry and bring the soup to a simmer.
    Whisk a little of the hot mixture into the
    egg ylks and cream and then whisk back all
    into the soup, stirring until it thickens.

    Makes 1 quart or 4 servings.
