    TRISH'S 15 BEAN SOUP

    My friend Trish got this from a bag of Hurst's Ham Beans, 11/89

    Wash 20 oz. combination of dried beans. Place in big pot; cover with water and 1-2 TBS. salt. Soak overnight. Drain; add 2 qts. water. Add ham, salt pork or smoked sausage. Bring to boil, then simmer slowly for 2 1/2 to 3 hours.

    Add 1 large onion, chopped, 1 large can tomatoes, red pepper (optional) or 1 tsp. chili powder; juice of 1/2 lemon, 1 clove minced garlic and salt & pepper to taste. Simmer 30 minutes longer. Makes about 12 servings.
