    • 1-1/2 lbs. Alaska Dungeness, King, or Snow crab OR 12 pz. Alaska pink shrimp*
    • 2 large tomatoes, cut in wedges
    • 2 hard cooked eggs, cut in wedges
    • 1 cucumber, sliced
    • 1/2 cup ripe olives
    • lettuce
    • lemon wedges
    • Louis Dressing
    • * If desired, 12 oz. poaced Alaska cod, halibut, pollock, rockfish, sablefish, or salmon may be substituted.


    Instructions


    1. Arrange seafood, tomatoes, eggs, cucumber, and olives on lettuce lined plates. Garnish with lemon. Serve with Louis dressing. Serves 4.
    2. For Louis Dressing: Combine 1 c. mayonnaise, 1/4 c. chili sauce, 2 T. chopped green onion, 1 T. lemon juice, and a dash of bottled hot pepper sauce. Cover and chill. Makes about 1-1/4 cups.
    3. Fluffy Dressing Variation: Beat 1/4 c. heavy cream until soft peaks form. Fold into Louis Dressing. Cover and chill. Makes about 1-1/2 cups.
