    Oriental Pasta Carrot Salad

    List of Ingredients


    • 3 cups rotini pasta, uncooked
    • 2 T. peanut or vegetable oil
    • 1 T. margarine
    • 1/4 cup sliced green onions
    • 1-3/4 cups sliced carrots
    • 2 T. brown sugar, packed
    • 1 T. low sodium soy sauce
    • 2 tsp. cornstarch
    • 1/4 tsp. ground ginger
    • 1/3 cup sliced celery
    • 1 T. toasted sesame seeds
    • 1/3 cup low sodium chicken broth


    Instructions


    1. Cook pasta according to directions. Drain and rinse with cold water, and drain again.
    2. In medium skillet, heat oil and margarine over medium-high heat until hot. Add green onion; cook until tender. Add carrots and cook 2 minutes.
    3. Combine remaining ingredients, except celery and sesame seeds. Stir into carrot mixture. Remove from heat and continue stirring until smooth and slightly thickened.
    4. In a large bowl, gently toss cooled pasta, celery, and sesame seeds. Blend in carrot mixture. Cover and chill, stirring occasionally. Serve on lettuce, if desired.
