    Pierogi Casserole

    PIEROGI CASSEROLE
    1 pound bacon, cooked crisp and crumbled
    10-12 potatoes, boiled
    3/4 pound cheddar cheese, grated
    2 sticks butter (or margarine)
    2 onions, finely diced
    1 pound lasagna noodles, cooked
    Sour cream
    Mash the potatoes, but do not add any milk or butter, or anything else.
    Once smooth add the cheese to the potatoes and beat in w/mixer. Keep warm.
    Saute onions in butter. When done add 1/2 of the onion/butter mixture to the
    potatoe/cheese mixture. Salt to taste.
    Generously butter a 13 x 9 dish. Place a layer of noodles in dish, then a
    layer of potato mixture, then sprinkle bacon over layer. Repeat; ending with
    noodles. Pour remaining butter/onion mixture over all. Sprinkle bacon over
    top.
    Cover with foil. Bake at 350~F for 30 minutes or until heated through.
    Serve with lots of Sour cream and rye bread with butter.
