Cheesy Zucchini Chowder
Recipe Introduction
I got this recipe from a very good friend of mine.
It is a very rich, and delicious soup.
List of Ingredients
- 4 Tbsp Butter
- 1 medium onion chopped
- 1/3 Cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 3 Cups Water
- 3 ckn boulion cubes
- 1 tsp each - parsley, oregano, basil
- 1 - 12oz can evaporated milk
- 4 medium potatoes peeled and chopped
- 2 medium zucchini chopped
- 1 - 10 oz pkg frozen corn
- 1/4 tsp sugar
- 1/4 cup parmesan cheese
- 2 Cups shredded cheddar cheese
Instructions
- In a large pot over med. heat melt butter. Add onions and cook til tender.
- Stir in flour to make a roux.
- Dissolve ckn cubes in water. Slowly add to the roux.
- Add the parsley, oregano & basil. Stir in the evaporated milk and potatoes. Bring to a boil, reduce heat, cover and simmer for 3 minutes.
- Add zucchini and simmer til tender.
- Add corn and sugar and simmer for 5 min longer.
- Just before serving stir in cheeses til melted.
Final Comments
You may garnish this with a little more of the
fresh herbs if desired
Makes a nice size pot of soup
Serves 8 - 10
