    6 eggs, hard-boiled, shells removed
    1 cup cider vinegar
    1 can beets, canned, reserve 1 cup juice (small whole beets)
    1/3 cup sugar, or packed brown sugar
    1/2 tsp salt, or garlic sat
    1 small onion (about 1/4 cup) optional - chopped
    4 whole cloves, optional
    Shredded greens, optional

    Recipe



    Place peeled eggs and drained beets in a bowl or wide mouth glass jar. Mix vinegar, beet juice, sugar & salt (optional onion & cloves) and pour over eggs & beets. Cover and refrigerate at least 2 days. Slice eggs; serve on greens. They can also be eaten with a little salt and pepper. Serves 6


    SPICED PICKLED EGGS: Substitute 2 cups white vinegar for the cider and beet juice.
