Scallops in Snow

List of Ingredients
1 teaspoon ginger, minced
1/4 teaspoon salt
3-4 dried scallops
10 egg whites
2 green onions, finely chopped
Recipe
Soak dried scallops in warm water for 30 minutes until soft. When softened, shred dried scallops into small pieces. Set aside.
Beat egg whites until fluffy.
Combine scallops, egg whites, and first two ingredients in a steaming dish.
Place steaming dish in a steamer for 15 minutes (or until knife inserted comes out clean.)
Sprinkle the top of the dish with diced green onions and serve immediately. Serves 4
