Use a grill with a cover for less tender cuts of meat.
Cook fish until it is just done, as it continues to cook once it has been removed from the fire.
Don't skimp on the charcoal; the area of the fire needs to be wider than the area of the food you're grilling.
Make sure you have plenty of time; from the coals to the table, everything will turn out better if you're not in a rush.
Clean your grill (especially the rack) before each use, then oil the rack to prevent sticking. Caring for a grill is similar to caring for a cast-iron skillet.
Precooking foods like chicken, ribs and roasts allows you to cook ahead and simply finish the food on the grill. Allow at least 20–30 minutes on the grill to achieve great charcoal flavor.
Wait to brush on the barbecue sauce in the final 5–10 minutes of cooking; this allows the smokey charcoal flavor to penetrate the meat first, and prevents the sauce from turning black.
