Chocolate Walnut Biscotti

List of Ingredients
1 cup unbleached flour
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1 egg white
1-1/2 tsp vanilla
2 oz bittersweet chocolate, chopped
1/4 cup chopped walnuts Recipe
Spread the walnuts on a pie plate and bake at 400° for 5 minutes, or until fragrant. Let cool.
In a large bowl, combine the flour, sugar, cocoa, baking powder, baking soda and salt. In a medium bowl, whisk together the egg, egg white and vanilla. Add to the flour mixture and stir until smooth. Stir in the chocolate and walnuts.
Coat an 11"x7" or a 9"x9" baking pan with nonstick spray. Press the dough into the prepared pan. Bake at 350 degree's for 25 minutes, or until firm. Immediately cut into 30 fingers. Cool before serving. Makes 30 biscotti
