    BREAD MACHINE: Irish Raisin Bread

    Source of Recipe

    Lynda McCormick

    List of Ingredients

    1 pkg yeast
3 c bread flour (up to a 1/4 c more may need if bread is too wet)
    1/4 c sugar
    3 tsp cinnamon (3 to 4)
    1/4 tsp salt
    1/4 c butter
    1 egg
    3/4 c water
1/2 c whole milk or buttermilk
1 c raisins or can sub craisins

    Recipe

Add all ingredients in the order your machine instructs, except raisins to pan. Select RAISIN CYCLE. Add raisins when machine beeps. (if your machine doesn't have one use WHITE BREAD CYCLE & add raisins on the 2nd kneading - 5 minutes before done). You will want to use a LIGHT crust setting also if your machine has it. This rise very tall. This is a very rich, moist bread & makes wonderful French toast if you have any left over.

Note: You may also use 3 - 4 TBSP powdered buttermilk & all water - for a total of 1 1/4 cups if you wish.
