    QUICK BREAD: Coconut Bread

    List of Ingredients

    1 cup shortening
    2 cups sugar
    5 eggs
    2 cups flour
    1 teaspoon salt
    1 teaspoon baking powder
    1 cup buttermilk
    1 1/3 cups coconut (3 1/2 oz)
    1 tablespoon coconut extract

    GLAZE
    1/4 cup water
    1 teaspoon coconut extract
    1/2 cup sugar

    Recipe

    Cream shortening, sugar & eggs, beat well. Sift flour, salt, baking powder. Add dry ingredients to egg mixture, alternating with buttermilk. Add coconut and 1 Tbl of extract. Grease& flour 3 small loaf pans to within 1 inch of top. Bake at 350 for 50 to 60 minutes. Remove from oven. combine glaze ingredients; boil for 2 minutes. Puncture top of bread with fork, and pour on glaze. Cool. Yields 3 loaves.
