    Fresh Herb Bread

    Source of Recipe

    Lynda McCormick

    List of Ingredients

    1 cup warm water
    1 pkg dry yeast
    2 tsp sugar

    2 1/4 cups bread flour
    1 tbsp chopped fresh rosemary
    1 1/2 tsp fresh basil
    1 1/2 tsp fresh thyme
    1 1/2 tsp fresh oregano
    1/2 tsp sea salt

    1 tsp olive oil

    TOPPING
3 tbsp finely shredded fresh Parmesan cheese
    1 tbsp chopped fresh rosemary
    1/4 tsp garlic powder

    Recipe

    1. ABM INSTRUCTIONS: Follow manufacturer's instructions for your machine & add first 9 ingredients to the bread pan. Select DOUGH cycle and start.

    2. Preheat oven to 350°.

    3. Remove dough from machine & turn out onto lightly floured peel or wooden cutting board. Rub dough with some olive oil. Shape into a 12" long loaf and place on baking stone (or baking sheet). Mix Parmesan, 1 TBSP fresh rosemary (or 1 tsp dried) & garlic powder in a small bowl. Sprinkle over top of loaf. Bake at 350° for 45 minutes or until loaf sounds hollow when tapped. Remove from pan & cool on a wire rack.

MIXER INSTRUCTIONS: Dissolve yeast with sugar and warm water (120º to 130ºF) in a warmed mixer bowl or one that's at least room temperature. Add flour, salt, basil, thyme, oregano and rosemary . Using dough hook, mix on LOW speed until well blended, about 1 minute. Knead on same speed (depending on your mixer) for 2 minutes. Dough will be sticky, but do not add extra flour. Place in greased bowl, turning to grease top. Cover with plastic wrap, then a heavy towel. Place in draft-free area and let rise until doubled, about 1 hour. Proceed with steps 2 and 3

    NOTES:
Herbs may be interchanged as follows:

1 tbsp chopped fresh or 1 tsp dried rosemary
1 1/2 tsp fresh basil or 1/2 tsp dried
1 1/2 tsp fresh thyme or 1/2 tsp dried
1 1/2 tsp fresh oregano or 1/2 tsp dried
