BREAD MACHINE: Walnut Raisin Whole Wheat Bread

Bread Machine Recipe Adaptable for Diabetics*
List of Ingredients
1 1/2 cups orange juice with calcium (about 90° F to 100° F)
1 tbsp cider vinegar
1 tbsp olive oil (room temperature
2 cups white unbleached bread machine flour
2 cups whole-wheat flour
1 level tbsp vital wheat gluten
1/2 ripe medium size banana, sliced
2 tablespoons white granulated sugar (or Splenda substitute)*
1 tbsp bread machine yeast
3/4 cup Raisins
1/4 cup golden seedless raisins
1/2 cup unsalted walnuts, chopped in processor
Recipe
Place orange juice in your bread machine. Put ingredients into machine in order listed. Hold raisins and walnuts for "raising buzzer." Set machine for white bread, 2 pound loaf or medium crust. I recommend the Breadman TR810 machine for this recipe If your machine chooses bake time by loaf size or weight, choose 2 pound size or a 3 hr 30 minute cycle. Serve with dinner, for sandwiches or as a crispy toast in the morning, topped with your favorite jam.
*If you want to cut sugars to zero, exchange orange juice for bottled water, use Splenda instead of sugar and leave out the raisins. Add another 1/4 cup unsalted chopped walnuts and maybe some caraway seeds to flavor this if you do. You may also replace raisins with chopped dates. Makes 1 loaf for 16 slices
