    WRAP: Mediterranean Wraps

    List of Ingredients

    2 Mediterranean style flat breads (2 to 3) *see notes
    2 cups sliced rotisserie seasoned turkey breast, more or less
    1 cup grape tomatoes, cut in half
    1/2 cup English cucumbers, peeled and chopped
    1 ounce feta cheese, crumbled (about 1 to 1 1/2 oz)
    1 tbsp lemon juice, freshly squeezed
    2 tbsp olive oil (2 to 4)
    Sea salt, to taste
    freshly ground black pepper, to taste
    Lettuce leaves, Kalamata olives &
    purple onion, sliced, for garnish
    Moosewood's Feta Cheese & Garlic Greek Style Dressing, or Tsatsiki

    Recipe

    Mix tomatoes, cucumbers, feta, lemon juice and oil in a glass bowl. Season with salt and pepper. Fold in turkey. Place your lettuce on the flat bread and top with the turkey/tomato mixture. Top either with the Greek dressing or tsatsiki, then garnish with olives and onion. Fold wrap up and serve. This will fill 2-3 wraps generously!

    The first time I made these I used white flatbread, but tomato & basil would also be good.
