    Upside-Down Apple Gingerbread

    List of Ingredients




    3/4 cup light butter, melted & divided
    2 large apples, peeled, cored & sliced (or pears, about 3-4)
    2/3 cup packed brown sugar, divided
    1/2 cup molasses
    1/2 cup sugar
    1 egg
    2 cups flour
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp ginger
    1/2 tsp cloves
    1/4 tsp freshly grated nutmeg
    1/2 tsp kosher salt
    3/4 cup hot brewed tea (orange pekoe is good)

    Preheat oven to 350°F. Pour 1/4 cup melted butter into a 9" baking pan. (she used a cast iron skillet) Arrange apple slices over butter. Sprinkle with 1/3 cup packed brown sugar and set aside.

    GINGERBREAD: Combine remaining 1/2 cup butter, molasses, sugar, remaining 1/3 cup packed brown sugar and egg in a mixing bowl. Mix well. Combine remaining dry ingredients and add to batter, alternating with tea; mix well. Pour over apples. Bake for 45 to 50 minutes or until a toothpick inserted near center comes out clean. Cool for 3 to 5 minutes. Run a knife around the sides of the pan and invert on serving plate. Serve warm. Serves 9
