Applesauce Pecan Cake

CAKE
One 18.5 oz box Duncan Hines yellow cake mix
1/2 c butter, softened
1 1/3 c applesauce
3 eggs
1/2 tsp cardamom
1 1/2 c chopped pecans
MOCHA FROSTING
1 tbsp instant espresso or coffee powder
Sm bag (6 oz) semisweet chocolate morsels
1/4 c water
1 c butter, softened
3 egg yolks
2 c confectioners’ sugar

CAKE: Preheat oven to 375°. Spray two 9" cake pans with Pam. In a large mixing bowl, combine cake mix, butter, applesauce, eggs, and cardamom. Beat until well blended and smooth. Stir in pecans. Spread batter evenly in prepared cake pans. Bake 30 to 35 minutes or until a toothpick inserted in the centers of the cakes comes out clean. Cool in pans for 10 minutes. Remove and continue cooling on a wire rack.
MOCHA FROSTING: In a small pot, combine coffee, chocolate morsels, and water. Cook over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Set aside to cool.
In a medium bowl, cream butter until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in chocolate mixture and confectioners’ sugar. Refrigerate until thick enough to spread. Fill between layers and frost cake. Decorate with pecan halves.
