    Broccoli & Ziti Casserole

    List of Ingredients

    2 tbsp olive oil
    1 clove garlic, minced
    1 1/2 pounds fresh broccoli, about 4 cup cooked
    2 cups tomato sauce, jarred or fresh
    1/2 pound ziti pasta, cooked
    1/4 cup fat-free Parmesan cheese, grated
    1 pound lowfat ricotta cheese, or fat free ricotta
    cheese
    1/4 cup seasoned bread crumbs
    2 tbsp toasted wheat germ, optional

    Recipe

    Preheat oven to 350°. Heat olive oil in skillet. Saute garlic until soft, not brown. Stir broccoli into garlic oil & set aside. In a large, oblong casserole dish, layer 1/2 of the tomato sauce, 1/2 cooked ziti, 1/2 Parmesan cheese, all of the broccoli, all ricotta, remaining ziti, remaining sauce, crumbs, wheat germ, and remaining Parmesan cheese. Cover with foil & bake for 35 minutes. Uncover during last 15 minutes of cooking. Sauce should be bubbly & top lightly browned. Serves 6.
