Very simple to make.
List of Ingredients
1 sm head cabbage (about 1 1/2 lbs) cored & cut into 6 - 8 wedges
1 can corned beef brisket, canned (12 oz) sliced OR 1/2 lb sliced deli corned beef
1 can sliced carrots (14 oz) drained
1 can canned potatoes (16 oz) sliced and drained
1 can French-fried onions (2.8 oz) (Durkee)
1 can cream of celery soup (10 3/4 oz)
3/4 cup water
Recipe
Preheat oven to 375°. Arrange cabbage wedges & corned beef slices alternately down center of 9x13" baking dish. Place carrots, potatoes & 1/2 can of onions along sides of dish. In small bowl combine soup & water, pour over meat & vegetables. Bake, covered with foil, at 375° for 40 - 45 minutes or til cabbage is tender. Top with remaining onions, bake uncovered, 3 minutes or till onions are golden brown. Makes 4 to 6 servings.
Notes: To make this less "canned" I use deli cut corned beef (meat counter can cut about 4-6 thick pieces for you), fresh baby carrots & potatoes ....precooked (microwaved 3-4 mins) so it all cooks the same time. I still use the cream of celery & dried onions, but the overall result is more like it simmered all day.
