    Not really a "cheesecake," but I felt they could fit into this category. The recipe came from a neat little cookbook I found while vacationing in AZ a few yrs back. I hope you'll enjoy these as much as I do!

    List of Ingredients




    3 ounces cream cheese, softened
    2 tablespoons sugar
    1/2 cup chopped walnuts
    1 cup flour
    1/4 cup sugar
    5 tablespoons CHOCOLATE COCOA MIX
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 egg, beaten
    3/4 cup milk
    1/3 cup oil

    Recipe



    In a small bowl blend cream cheese & 2 TBSP sugar till fluffy. Add chopped walnuts & set aside. In a large bowl combine flour, 1/4 cup sugar, cocoa, baking powder & salt. Combine egg, milk, & oil in another bowl. Make a well in the center of the dry ingredients & add milk mixture. Batter will be thin & lumpy.

    Spoon about 1 TBSP chocolate batter into each greased muffin cup. Drop 1 TSP of the cream cheese mixture on top & then more chocolate batter. Bake immediately in a 375° oven for 18 to 20 minutes. Makes 12 muffins.
