    Chicken Breasts & Zucchini With Garlic Cream Sauce

    List of Ingredients

    1/4 cup butter
    3 whole chicken breasts, halved
    3 cups zucchini, sliced 1/8-inch thick
    1/2 cup green onions, diced

    GARLIC CREAM SAUCE
    2 tablespoons butter
    1 teaspoon minced garlic
    3 tablespoons flour
    1 package cream cheese (3 oz)
    1 can chicken broth
    1/2 teaspoon pepper

    Recipe

    In 10" skillet, melt butter until sizzling, add chicken breasts. Cook over medium heat, turning once, until chicken is browned and fork tender. Add zucchini and onions. Continue cooking, stirring occasionally, until zucchini is crisply tender, 5-7 minutes.

    GARLIC CREAM SAUCE:
    Meanwhile, in saucepan, melt 2 TBSP butter. Add flour; continue cooking until bubbly. Add remaining garlic cream ingredients except rice. Continue cooking, stirring occasionally, until sauce is thickened. Serve zucchini and chicken over rice; pour sauce over chicken.

    This is pretty served on a bed of rice, layer the zucchini and then the chicken breasts on top, pour sauce over each breast.
