Crispy Cinnamon-Chicken Bake

1 1/4 cups cornflake crumbs
2 tablespoons brown sugar, plus 2 tsps
1 tablespoon cinnamon, plus 1 tsp
1 tablespoon grated orange peel, plus 1 tsp
1 teaspoon salt
1 cup nonfat buttermilk
6 pounds chicken parts, skinned *see note
2 tablespoons canola oil, plus 2 tsps
Recipe
Preheat oven to 400°. In blender combine cornflake crumbs, sugar, cinnamon, orange peel & salt. Process until well blended. Pour mixture onto sheet of wax paper or paper plate.
Pour buttermilk into bowl. Dip chicken parts into buttermilk, then coat with crumb mixture, pressing crumbs into chicken and being sure to use all of buttermilk & crumb mixture. Using oil, grease nonstick baking pan large enough to hold chicken in 1 layer. Add coated chicken parts & bake until tender, about 30 minutes. Makes 8 servings.
Note:
*6 lbs chicken parts will yield about 2 lbs cooked meat
