Boneless skinless chicken breasts, pounded thin

Recipe
I pounded the chicken breasts (almost) paper thin and let them soak a bit in buttermilk. Then dipped into a mixture of parmesan cheese (1/2 fresh & 1/2 Kraft) and Italian bread crumbs, then into an egg mixed with some buttermilk and back into the bread crumb mixture. Fry in butter/olive oil and then place them in a heated (400°) oven topped with mozzarella cheese for a few minutes until melted. Serve over angel hai pasta.
