Double-Ginger Molasses Cookies

List of Ingredients
1 cup light or dark brown sugar
2/3 cup shortening
1/2 cup light molasses
1/4 cup milk
2 teaspoons baking powder
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 large egg
3 1/2 cups all-purpose flour
3 tablespoons crystallized ginger
1/4 cup sugarRecipe
Mix first 11 ingredients and 2 cups of the flour with a mixer on low speed
until well blended. With a spoon, stir in remaining flour.
Preheat oven to 350 degrees. cut crystallized ginger into 1/4" pieces. Place
1/4 cup sugar in a small bowl. Roll cookie dough into 1.5" balls; roll each
ball in sugar to coat. Place balls 2" apart on 2 ungreased large cookie
sheets. Gently press 1 piece of crystallized ginger into center of each ball,
flattening ball slightly.
Bake 7-10 minutes or until bottoms are lightly browned, switching cookie
sheets on oven racks halfway through baking time. Remove cookies to wire
racks to cool.
