1/4 c butter, softened
3/4 c sugar
1 tbsp lemon peel, freshly grated
1 tsp lemon juice, freshly squeezed
1/4 tsp salt
1/4 tsp allspice
1 egg
1 c flour
1/2 tsp baking soda
1/4 tsp cream of tartar
1 c quick-cooking oats
Vegetable cooking spray



Recipe

Preheat oven to 350°. Cream butter. Gradually add sugar, beat at medium speed with electric mixer until well blended. Add lemon peel, lemon juice, salt & allspice. Beat in egg & mix well. Combine flour, baking soda & cream of tartar. Gradually add to creamed mixture. Beat well. Add oats & mix well. Drop dough by rounded teaspoonfuls onto cookie sheets coated with cooking spray. Bake at 350° for 12 minutes. Makes about 3 dozen cookies. (I double this cookie dough)
