    Snowball Cookies (aka Mexican Wedding Cakes)

    List of Ingredients

    1 cup butter, no substitutes
    1/2 cup powdered sugar
    2 1/2 cups flour
    1/4 teaspoon salt
    1 teaspoon vanilla
    3/4 cup pecans, chopped

    Recipe

    Cream butter with the sugar. Add flour, salt and nuts and mix well. Scoop into one inch sized balls and bake @400� for 14-17 mins. While warm roll in powdered sugar and set aside to let cool. When cooled reroll again and store. These will keep fresh forever in an airtight container in the freezer.
