    List of Ingredients




    3 C. flour
    1 T. baking powder
    1/2 t. salt
    1 C. sugar
    1 C. flaked coconut
    1 egg, beaten
    1 C. milk
    1 t. vanilla extract
    1/2 t. coconut extract

    Recipe



    Mix flour, baking powder, salt and sugar; add coconut and mix thoroughly. Combine liquid ingredients and sitr into dry ingredients. Mix well and press into 2 well greased and flour 1-pound cans or molds. (Batter will be stiff.) Set in cooker and cover with 2 or 3 paper towels. cover cooker and cook on high for 3 hours or until done. Let stand on cake rack for 10 minutes then turn our on rack 10 minutes then turn out on rack to cool.
