1 32 oz pkg peeled baby carrots
1/3 cup thawed frozen orange juice concentrate
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1 1/2 tablespoons cornstarch
1 tablespoon butter
2 tablespoons grand Marnier or other orange liqueur, optional
salt and freshly ground pepper
Recipe
In a 3.5 quart crockpot, mix the carrots, orange juice concentrate, brown
sugar, nutmeg, and 2 T. water.
Cover and cook on the low heat setting about 7 hours, or until the carrots
are almost tender. Increase the heat to the high setting.
Dissolve the cornstarch in 2 T. cold water and stir into the carrots. Cook,
covered, 30 minutes longer or until slightly thickened. Stir in the butter
and liqueur and season with salt and pepper. Serve hot.
