    1 1/2 cups flour
    1 cup firmly packed light brown sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup butter flavored Crisco, melted
    1/4 cup dark corn syrup
    2 eggs, lightly beaten
    1 teaspoon vanilla
    1 1/2 cups shredded carrots
    1/2 cup craisins
    1/2 cup chopped pecans

    Preheat oven to 350°. Grease and flour an 8-Inch cake pan.

    In a medium bowl combine flour, brown sugar, baking powder and salt. Add shortening, corn syrup, eggs and vanilla, mixing until combined. Stir in carrots, raisins and walnuts. Spread in pan. Bake 45 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely in pan on wire rack. With a sharp knife, cut into squares.

    You can frost with a cream cheese icing if you'd like.
