    IRISH: Irish Whiskey Cake

    1 lemon or orange
    2 tablespoons good, strong Irish Whiskey
    1 1/4 cups sultana raisins
    3/4 cup butter
    3/4 cup sugar
    3 eggs
    2 1/2 cups sifted cake flour
    1 Dash salt
    3/4 teaspoon baking powder

    Recipe

    With a sharp knife, peel the rind off the lemon (or orange). Soak the rind in the whiskey for a few hrs to draw out the flavor. Discard the rind & soak the sultanas in the whiskey. Cream the butter & sugar. Add eggs, 1 at a time with a teaspoon of flour & beat well after adding each egg & flour. Sift flour, salt & baking powder together & fold in egg mixture. Lastly, fold in the sultanas & whiskey. Put into an oiled 7" cake pan that is lined with was paper. Bake at 350° for 1 1/2 hrs. Reduce heat at end of baking time. Eat while fresh.

    Note: The 7" cake pan called for in this recipe is the European type, between 3-4" tall. if you don't have one, use a small spring form pan.
