    ITALIAN: Mozzarella with Tomatoes and Basil

    Recipe Introduction

    This appetizer is always a hit. It's delicious and easy to make. The important thing to remember is to buy the right sort of mozzarella cheese. It should only be fresh mozzarella made from cow's or buffalo's milk. If your regular market does not carry it, try a gourmet shop or an Italian market. It is well worth finding the right one!

    List of Ingredients

    12 oz mozzarella cheese
    16 fresh large basil leaves
    3 large ripe tomatoes
    3 tablespoons extra virgin olive oil
    2 teaspoons balsamic vinegar
    Sea/kosher salt and freshly ground black pepper, to taste

    Recipe

    Cut the tomatoes and the mozzarella into thick slices of 1/4" each. Place the tomatoes on the bottom of a serving platter. Place the mozzarella over the tomatoes. Set side. Combine the oil and vinegar together and drizzle over the tomatoes and mozzarella. Place the the basil leaves atop the cheese. If you prefer smaller pieces of basil leaves, tear the leaves before distributing them on top of the cheese. Add salt and pepper to taste. Serve at room temperature. Serves 6 people
