Coconut Prawns with Dipping Sauce

List of Ingredients
24 medium to large prawns
2 eggs, lightly beaten
1 cup coconut flakes
24 wonton wrappers
1 ripe mango or 1/2 can mango slices in juice
1 crushed clove garlic
1 tablespoon chili sauce
1 tsp. sugar
Fresh corriander or 1/2 tsp. of dry
oil for deep frying
Recipe
Leave the tails on the prawns but remove the vien. Dip the prawns in the beaten eggs and then into the coconut. Wrap individual prawns in a wonton wrapper with the tail exposed.
Mash & mix the mango with garlic, chili sauce, sugar and a wee bit of coriander.
Deep fry until wontons are golden colored. Drain on paper towels or brown paper bag and serve with the mango sauce
