    Strawberries with Cannoli Cream

    This is the perfect end to a summertime meal!

    List of Ingredients

    1 package strawberries -- (1 pound) rinsed, dried, hulled and cut in half or quarters
    1/2 cup part-skim ricotta cheese
    2 tablespoons confectioner's sugar
    1/8 teaspoon grated orange peel
    2 tablespoons orange juice
    1/2 teaspoon pure vanilla extract
    2 drops almond extract
    2 teaspoons semisweet chocolate -- chopped (Ghirardelli chocolate's excellent!)

    Recipe

    In food processor or blender, combine ricotta, sugar, orange peel and juice, vanilla and almond extracts. Process or blend until very smooth. Stir in chocolate. Cover and refrigerate until ready to serve. Serves 4

    TO SERVE: Divide berries among bowls or stemmed glasses. Stir cream and pour over berries.
