    1 onion, chopped
    3 cloves garlic, minced
    1/2 c prosciutto or cooked ham, chopped
    1 (8 oz) pkg sliced, fresh mushrooms
    2 1/2 lbs boneless pork, cubed
    3 tbsp flour
    2 tsp Italian herb seasoning
    2 oz can anchovy, drain, chopped (optional - I never use)
    1 large (28 oz) can Italian crushed tomatoes, undrained
    2 tbsp tomato paste
    2 tbsp dry red wine
    Parsley, chopped

    Recipe



    In a 3 quart or larger crockpot, combine onion, garlic, prosciutto or ham, and mushrooms. In a small paper bag, shake pork with flour and seasonings, then add to the crockpot. Sprinkle any remaining flour over the anchovies and add them to the crockpot. Pour in tomatoes. In a small bowl, mix tomato paste and wine; add to the crockpot. Cover and cook at LOW setting until pork is very tender when pierced with a fork, about 8 to 10 hours. Skim off any
    fat. Sprinkle with parsley and serve.
