    From Marica Adams:
    Ham loaves are often taken to church socials; there are many versions. Some use equal parts of veal with the ham, others are quite spicy, and some are glazed with a brown sugar and vinegar sauce. All are eaten with sighs of pleasure. this version, with it's touch of ginger and curry, is inverted onto a platter after baking, and lo, there is a top layer of carmelized pineapple. "This is not your ordinary ham loaf," said Ada Carey of Clayton, MO, who gave me (Marcia) this recipe

    List of Ingredients




    2 tablespoons melted butter
    1/4 cup packed brown sugar
    1 can crushed pineapple in water -- (20 oz) well drained, juice reserved *see notes
    vegetable cooking spray
    3 large eggs
    6 cups cooked ham -- coarsely ground (done in food processor)
    1 1/2 cups bread crumbs
    1/2 cup parsley -- chopped
    1/2 cup onion -- chopped
    1 1/2 teaspoons mustard powder
    1 1/2 teaspoons ground ginger
    1 1/2 teaspoons curry powder
    1/4 teaspoon black pepper

    Recipe



    Preheat oven to 350°.

    In a small bowl, mix together butter, brown sugar and drained pineapple. Coat a 10x10" baking pan with vegetable cooking spray; pour in pineapple mixture and pat it out smoothly on the bottom of pan.

    In a large mixing bowl, beat eggs with a fork. Stir in ham, pineapple juice, bread crumbs, parsley and spices; mix well. Spread ham mixture over the pineapple, patting it firmly over the mixture. Bake 45 minutes. Remove from the oven and allow to cool for 10 minutes. To serve, invert onto a serving platter. If any of the pineapple mixture remains on the bottom of the pan, pat it onto the loaf. Serve immediately. Serves 9.

    MY NOTES 12/28/03..........I omitted the curry powder. I used sliced rings of pineapple - mixing the brown sugar with just the melted butter. I placed the pineapple rings on the bottom of the pan (cutting if necessary) and I placed maraschino cherries (halved) in the "holes." This made a very nice presentation.........was a hit with everyone
