    PORK RIBS: Hot & Spicy St Louis-Style Spareribs

    Recipe Introduction

    Originating from the sparerib, St. Louis Style ribs are prepared by removing the brisket bone approximately parallel to the rib side, exposing cartilage on the brisket bone side.

    List of Ingredients

    3 pounds St Louis-Style Spareribs

    SAUCE
    2 tablespoons butter, melted
    1 Medium onion, finely chopped
    2 cloves Garlic, minced
    15 ounces Canned Rotel tomato sauce
    2/3 cup Cider vinegar
    2/3 cup Firmly packed brown sugar
    2 tablespoons Chili powder
    1 tablespoon Prepared mustard

    Recipe

    SAUCE: Melt butter in a large skillet over low heat; add onion and garlic, and saute until tender. Add remaining ingredients, except ribs, and bring to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally.

    Place ribs in grill, meatiest side down, about 6 inches above low coals, or over indirect heat (banked coals). Close grill hood. Cook for 20 minutes; turn. Cook for 45 minutes. Baste with saute, close grill and cook 10 minutes. Turn ribs, baste and cook 10 minutes more.
