    PORK RIBS: Tangy Orange Ribs

    List of Ingredients

    3 pounds baby back pork loin ribs
    1 jar orange marmalade (15.5 ounce)
    1/3 cup soy sauce, low sodium
    1/4 cup firmly packed light brown sugar
    1 tbsp minced garlic, or more
    1 tsp salt
    1 tsp pepper

    Recipe

    Place ribs in a large roasting pan.

    Whisk marmalade and next 3 ingredients until well blended; pour over ribs. Cover and chill overnight.

    Remove ribs from marinade, reserving marinade in a small saucepan. Line roasting pan with heavy duty aluminum foil; add ribs. Sprinkle with salt and pepper.

    Bring marinade to a boil; cover, reduce heat and simmer 5 minutes or until reduced to 1 cup.

    Bake ribs at 350° for 1 hour until tender, basting frequently with marinade about 15 minutes. Yield: 6-8 servings


    Sherry Notes: I cook in crockpot on LOW (usually overnight) & do not do the oven thingy (dirty too many pans). I do mix all the marinade ingredients in a small pot and "heat" until marmalade is melted.

    Lynda Notes..... I use sea salt & freshly ground ORANGE PEPPER.
