    Orange Teriyaki Chicken

    Wonderful Weight Watcher meal!

    List of Ingredients

    1 pound skinless boneless chicken breast halves (or thighs) cut into 1" pieces
    1 package frozen Singapore stir-fry vegetables (16 oz) loose-pack frozen broccoli, baby carrots, & water chestnuts
    2 tablespoons tapioca (quick cooking)

    --SAUCE--
    1/2 cup fat-free chicken broth
    2 tablespoons brown sugar
    2 tablespoons teriyaki sauce
    1 teaspoon dry mustard
    1 1/2 teaspoons orange peel (fresh) finely shredded
    1/2 teaspoon ground ginger

    hot cooked rice, optional

    Recipe

    Place vegetables in crockpot. Sprinkle tapioca over veggies. Place chicken on top of that. Combine sauce ingredients and pour over chicken. Cover; cook on LOW for 4-6 hours or on HIGH for 2-3. Serves 4


    4 Weight Wachers Points (served w/o rice)

    8 points served with 1 cup steamed white rice

    Serve over rice.
