    Linguine Alfredo

    List of Ingredients

    1 tbsp reduced-calorie margarine
    2 garlic cloves, minced
    1 tbsp flour
    1 cup skim milk
    1/4 cup nonfat cream cheese
    1/4 cup grated Asiago or parmesan cheese
    1 cup broccoli florets
    1 medium red pepper, seeded & cut into 1" pieces
    1/2 carrot, thinly sliced
    1 stalk celery, sliced (I omit this & add more broccoli)
    4 cups hot cooked linguine

    Recipe

    In a medium nonstick saucepan melt margarine. Sauté garlic until fragrant, about 30 seconds. Whisk in flour, then gradually whisk in milk. Cook, stirring constantly, until slightly thickened, about 2 minutes. Whisk in the cream cheese and Asiago. Cook stirring, until smooth, about 1-2 minutes. Remove from heat and cover to keep warm.

    Meanwhile steam broccoli, pepper, carrot and celery until tender crisp in your vegetable steamer.

    In a large bowl, combine the pasta and steamed vegetables. Add cheese sauce and toss to coat thoroughly. Serve at once. Makes 4 servings
