    Oatmeal Raisin Cookie Mix in a Jar

    "I love this gift for Christmas! Everyone gets and gives SO many home-baked goodies around the holidays, and this is something that they can enjoy after all the holiday cookies are gone. Tied with festive fabric and ribbon, it makes a great-looking presentation, and it's perfect for anyone on your gift-giving list. There are endless variations, such as brownies and other cookies, but this is my favorite." - from Elizabeth Pate, Kansas

    List of Ingredients

    MIX together and set aside:
    1 cup flour
    1 teaspoon cinnamon
    1 tablespoon baking soda
    1/2 teaspoon salt

    In a 1 quart, wide-mouth jar, layer (in this order):

    3/4 cup packed brown sugar
    1/2 cup raisins
    2 cups rolled oats

    Be sure to "pack" each ingredient down as you fill the jar.

    When you get close to the top, tap the jar bottom flat on the counter to encourage the ingredients to settle.

    LAYER the flour mixture on top.

    Place lid on jar, tie a circle of calico cloth onto the lid with pretty ribbon, and attach the following instructions:

    OATMEAL RAISIN COOKIES

    Empty jar of cookie mix into large mixing bowl, and thoroughly blend the mix.

    ADD:

    3/4 cup butter or margarine softened at room temp. (Do not use nonfat margarine.)

    STIR in one egg, slightly beaten. Add 1 teaspoon of
    vanilla.

    MIX until completely blended.

    SHAPE into balls the size of walnuts. Place on a parchment-lined cookie sheet 2 inches apart. (Do not use wax paper.)

    BAKE at 350 degrees F (175 degrees C) for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking racks to finish cooling. Makes 3 dozen cookies.
