    MUFFINS: English Breakfast Muffins

    Recipe Introduction

    Note from the author: No English breakfast is complete without orange marmalade. These muffins have it inside, as a surprise. Serve with a traditional English breakfast of scrambled eggs, fried tomatoes & mushrooms w/ a bit of sausage or soy sausage on the side......and of course, a steaming pot of tea. Or enjoy them on their on, as lighter fare.

    List of Ingredients

    3/4 cup flour
    3/4 cup whole wheat flour
    1/3 cup sugar
    2 tsp baking powder
    2 tsp ginger
    1/2 tsp baking soda
    1/4 tsp salt
    2 large eggs
    1/3 cup sour cream
    1/3 cup orange juice
    7 tbsp butter, melted
    1 tbsp grated orange peel
    1 Jar orange marmalade

    Recipe

    Mix all dry ingredients in a large bowl. Whisk eggs, sour cream orange juice, butter and orange peel in smaller bowl. Add to dry ingredients, stirring quickly. Fill muffin tins 3/4 full. Spoon 1 TSP orange marmalade in center of each muffin. Bake in a preheated 400° for 20 minutes or until brown. Makes 16 muffins.
