    MUFFINS: Greek Baklava Muffins

    Recipe Introduction

    These delicious Greek muffins are filled with chopped walnuts, butter and cinnamon, then drizzled with honey. A sweet treat after meals or a festive tea. (Lynda)

    List of Ingredients

    FILLING
    1 cup chopped walnuts
    1/3 cup sugar
    2 tablespoons brown sugar
    1 1/2 teaspoons cinnamon
    3 tablespoons butter, melted

    BATTER
    1 1/2 cup flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 cup sugar
    1 large egg
    3 tablespoons butter, melted
    1 cup buttermilk

    TOPPING
    1/2 cup honey

    Recipe

    FILLING: Mix filling ingredients together in a small bowl. Mix and set aside.

    BATTER: Combine flour, baking powder, baking soda, and sugar. In another bowl, whisk egg, butter, and buttermilk. Add to the dry ingredients until mixed. Fill lined muffin cups 1/3 full with batter and add 1 tablespoon filling, then cover with batter until 2/3 full. Sprinkle any remaining filling on top. Bake until golden brown. Remove from muffin tins and drizzle with honey.

    Bake at 400 degrees for 15 to 20 minutes. Makes 12 - 14 muffins
