    MUFFINS: Carrot Pecan Muffins

    From: Egg Beaters Healthy Real Egg Substitute

    List of Ingredients




    1 3/4 cups flour
    1 tsp baking soda
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/2 cup firmly packed light brown sugar
    1/3 cup reduced-calorie margarine, melted
    1/4 cup Egg Beaters or other egg substitute
    1 cup sweetened applesauce
    1 cup shredded carrots
    1/2 cup pecan halves, chopped
    Glaze, recipe in directions

    In small bowl, combine flour, baking soda, cinnamon and nutmeg. Set aside. In large bowl, combine brown sugar, margarine, egg beaters and applesauce. Stir in flour mixture, carrots and 1/3 cup pecans. Spoon batter into 12 greased muffin pan cups. Bake at 350° for 20 to 25 minutes or until golden brown. Cool. Spread tops of muffins with glaze. Sprinkle with remaining pecans. Makes 12 muffins.

    GLAZE: Combine 1 cup powdered sugar and 5 - 6 teaspoons water or milk.
