MUFFINS: Mandarin Orange Muffins

These make for a nice morning muffin.
List of Ingredients
1 can/cup mandarin oranges, in juice
1 tbsp orange extract
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup light brown sugar
1/4 cup sugar
1 egg, beaten
8 ozs sour cream
1/3 cup butter, melted
1/2 cup pecans, chopped
Recipe
Preheat the oven to 400°.
Line muffin tins with paper liners or grease and flour. Drain mandarin oranges, reserving liquid. Add the orange extract and enough water to make 1 cup of liquid.
In a large bowl, combine the flour, baking powder, baking soda, salt, brown and sugars. In a separate bowl, combine egg, sour cream, orange liquid and the butter. Add to dry ingredients with oranges and pecans. Stir just until moistened. Fill lined muffin cups 2/3 full. Bake for 20 to 25 minutes.
