MUFFINS: Peanut Butter Muffins

These make a wonderful quick breakfast in the morning or after-school snack for the kids. Adults love them too! -
List of Ingredients
1. In a mixing bowl, combine:
2 c. flour
1/2 c. sugar
3 t. baking powder
1/2 t. salt
2. Cut in:
1/2 c. peanut butter
2 T. butter
3. Stir until mixture resembles coarse crumbs.
4. Add:
1 c. milk
2 eggs, beaten
5. Stir just until moistened.
6. Pour batter into lined muffin cups, filling 2/3 full.
7. Bake at 400 degrees (F) for 15 - 17 minutes.
8. Remove from oven and immediately brush tops of muffins with:
2 T. melted butter
9. Combine:
1/2 c. sugar
2 t. cinnamon
10. Dip muffins in cinnamon mixture to coat tops.
