MINI MUFFINS: Gingerbread Bites

List of Ingredients
Mix together like pie crust. (I use my KA)
3 C flour
1 1/2 C sugar
1 C shortening (like Crisco - I use butter flavored)
Recipe
Then add the following:
1 tsp cinnamon
1/2 tsp ginger (more if you like a gingery taste)
1 heaping tbsp cocoa
Next slowly add in:
2 tsp baking soda mixed in 2 cup buttermilk
Spoon mixture into paper lined mini muffin baking cups. (almost 3/4s full). Bake in preheated 375° oven for 20 to 23 minutes. Makes about 6 dozen mini muffins.
