SCONES: Apricot Scones

1/4 cup butter, softened
1 cup powdered sugar
4 cups pastry flour
2 tablespoons baking powder
1 egg
1 1/4 cup milk
1/8 teaspoon salt
1 cup dried apricots, chopped
1/2 cup white raisins
Recipe
Preheat the oven to 400°F. Cream together the butter and sugar. Add the pastry flour, baking powder, egg, milk and the salt, mixing just enough to blend. Add the apricots and raisins.
Using small ice cream scoop, scoop out dough and drop each scoop into muffin cups. Press flat and bake scones at 400°F for 10 minutes or until golden.
