    List of Ingredients




    8 oz. whole wheat elbow macaroni or whole wheat shells
    1 small onion, peeled and diced
    12 oz. can of corn, drained
    1 jalapeno, cored and thinly sliced
    1 Tbsp. chili powder
    1 tsp cumin
    2 cloves of garlic, finely chopped
    16 oz. can red kidney beans, rinsed and drained
    12 oz. jar salsa
    1/2 c shredded cheddar cheese

    Recipe



    Prepare pasta according to package directions. While pasta is cooking, combine remaining ingredients except cheese in large pot and heat until onion is cooked.

    When pasta is done, drain well. Transfer to serving bowl. Add contents of pot and toss gently until well combined. Sprinkle cheddar cheese on top and serve immediately.

    Makes 8 servings. Each serving: 176 calories; 6 g. dietary fiber; 26 g. carbohydrates; 12 g. protein; 4 g. fat; 2 g. saturated fat; 8 mg. cholesterol; 537 mg. sodium
